Leftovers are definitely a must for frugal families wanting to stretch the food dollars. At holiday time there is no end to different ways to serve leftover turkey, and this pasta recipe is one delicious way.
Turkey pasta salad
2 1/2 cups cooked and drained rotini pasta
2 cups cooked white meat turkey, cubed
1/2 cup scallions, sliced thin
1/2 cup celery, chopped
1/3 cup chopped fresh parsley
1 tablespoon olive oil
2 tablespoons tarragon vinegar
1 teaspoon fresh lemon juice
2 tablespoons mayonnaise
- In a large bowl, combine cooked pasta, turkey, scallions, celery, parsley.
- In a small bowl, mix together oil, vinegar, lemon juice and mayonnaise. Add to turkey mixture.
- Mix well. Cover and refrigerate for 1 to 2 hours until chilled.
