Pumpkin butter may have butter in the name, but that is because it is spreadable, like butter. That is where the similarity ends. Close your eyes and imagine the fragrance of pumpkin spice cookies, or the spicy aroma of pumpkin pie or pumpkin spice latte. That is what pumpkin butter smells like. Now imagine that delicious pumpkin spice taste on whole grain toast, swirled into cream cheese for a decadent bagel spread, or as a perfect ingredient for pumpkin spice bread. Another hint, be sure to look for pie pumpkins, they are more flavorful than then large jack o lantern pumpkins.

1 lemon, juice and grated rind
1 tablespoon ground ginger
1 1/2 teaspoons cinnamon
