Place carrots in a food processor and pulse until chopped.
Spoon the carrots into a saucepan and set aside.
Place the apples, ginger and cinnamon in food processor and pulse until finely chopped.
Add the mixture to the carrots in the saucepan.
Add the chicken broth to the carrot/apple mixture and heat on medium until warm, approx. 8 mins.
Ladle warm soup into bowls and top with nuts if desired. Serves 4.
