Below is a low fat granola recipe you can make at home without the high fat content of granola cereals/bars:
- 2 1/2 cups rolled oats
- 1/2 cup pumpkin seeds
- 1/2 packed brown sugar
- 1/4 cup honey
- 1 tbsp. vegetable oil
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
- 1/2 cup dried cranberries
- 1/4 cup chopped candied ginger
Preheat oven to 300 degrees and line a baking sheet with parchment paper.
Mix together 1/2 cup packed brown sugar, 1/4 cup honey, 1 tbsp. vegetable oil, 1/4 tsp. salt and 1/4 tsp. cinnamon in a large bowl.
Fold in 2 1/2 cups rolled oats, 1/2 cup pumpkin seeds, 1/2 cup dried cranberries and 1/4 cup chopped ginger.
Spread mixture evenly onto baking sheet and bake for approximately 25 minutes until the oats are toasted. After granola is cool store in well sealed container.
This recipe contains: 23 grams of carbs, 2 grams of fiber, 3 grams of protein and 4 grams of fat. The caloric content is low with about 130 calories per 1/4 cup.
